
A nationwide
recipe contest was publicized, and the contestants were asked to submit
as many as four recipes of Filipino dishes one each from the
following four categories: appetizers, non-vegetarian delicacies, vegetarian/rice
& noodle specialties, and desserts. From all of the of recipes that
we received, a total of 41 winners were selected.
Mr.
Reynaldo G. Alejandro, a leading exponent of Philippine cuisine in America,
graciously agreed to be the judge of the Recipe Contest. Mr. Alejandro
is the author of 13 books including PHILIPPINE COOKBOOK, FLAVOR OF ASIA,
PHILIPPINE HOSPITALITY, RESTAURANT DESIGN, CLASSIC MENU and soon to be
published THE ADOBO BOOK, PASKO-PHILIPPINE CHRISTMAS and THE FOOD OF THE
PHILIPPINES. A graduate of the New York Restaurant School, he has cooked
professionally in America, Europe and Asia and manages his catering company
in Manhattan. He has written for The New York Times, Cuisine
Magazine, Food Magazine, Flavor of Asia, among others and
is presently a columnist for both the Filipino Reporter (New York)
and the Philippine Daily Inquirer (Manila).
All
the recipes that we received were forwarded to Mr. Alejandro for selecting
winners from each of the four categories. Subsequently, we received or
requested written statements from all the finalists testifying that the
recipes they had submitted were their own. The winners were requested
to submit pictures of their recipes if able. Some of these pictures are
included in the Recipe Book. Other photographs were provided by
various organizations. Therefore, not all pictures are exactly matched
with or fully representative of the recipes.
The
winners of the Recipe Contest received a $100 gift certificate for long
distance service from AT&T for each entry that was selected. We appreciate
the sponsorship of this book by AT&T.
Recipes
included as Chef's Favorites were obtained from hotels in Manila and Mama
Sita's Philippine Sauces and Mixes.
This
Recipe Book of Filipino Cuisine has been produced purely as a community
involvement project. Pictures and cooking instructions may not be as refined
as professionally written books by acknowledged culinary professionals.
